Whipped Yogurt and Fruit Breakfast Popsicles
I have been on a roll with making “Breakfast” popsicles for my three boys. These have been a huge hit, and help us when the day starts going downhill mid morning. The popsicles are easy to make in advance, and usually are ingredients you may already have at home. My boys love these while in their little pool, or if we feel like reading some books together. I am so glad I started making these.
Whipped Yogurt and Fruit Breakfast Popsicles
For the fruit:
Your choice of frozen fruit 2 cups- I used a mixed organic fruit of blueberries, blackberries, and strawberries
Add fruit to a sauce pan and place on medium heat. Stir here and there, until fruit begins to heat and dissolve. As it heats, use a masher to crush the fruit down.
Add 2 Tablespoons organic cornstarch to your fruit once all crushed down, and remove from heat.
Yogurt mix:
1 cup vanilla yogurt of choice
1/4 heavy whipping cream
In a medium bowl add yogurt, and heavy whipped cream.
With a hand mixer, whip the mix for a few minutes.
Add 1-2 Tablespoons of yogurt mix to a popsicle mold, then fruit mix. Continue until mold is full.
Freeze, and enjoy!
