Recipes I made ahead to make my week easier

We all know once Monday rolls around, making breakfast just doesn’t sound good to us. My boys are ready to go for breakfast within 20 minutes of waking up, especially my 3 years old, OR it is a major fit throwing morning. Then the whole day goes downhill. I have been starting to prep for our weeks more on the weekend. I take a few hours, and it helps tremendously. I always make it a point to get a dinner menu for the week so I can organize groceries. But starting to add in prepping breakfast, and a few snacks, has made all the difference! The snacks help when we want to do a craft, read together, or whatever the day brings, but a snack makes everything better with kids. It gets us by for a few day before I need to make another round. This week I made a new breakfast item-cinnamon roll muffins ( drool right?) , and a couple snacks- breakfast popsicles, and s’more granola bars. Here are two of the recipes!

Cinnamon Roll Muffins

For the Dough:

½ cup brown sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon vanilla

1 egg

1 cup buttermilk

2.5 cups flour, more if dough is too sticky

 

Mix in a large bowl.

 

Knead dough for about 5 minutes. Roll dough into a ball.

 

On a floured countertop,  roll out your dough into a 9X13 rectangle.

 

Filling:

3 Tablespoons melted butter

½ cup brown sugar

2-3 Tablespoons cinnamon

 

Place filling over the dough- butter then sugar and cinnamon.

 

Cut into 1 inch strips, should get about 12.

Roll the strips into a muffin.

Cook in lined muffin sheet at 350 for 15-20 minutes.

 

Top with a simple glaze

 

1 cup powdered sugar

½ cup milk

1 teaspoon vanilla

 

Whisk together!

 

I made these ahead of time. Stored in the fridge. Warmed the muffin for 20-30 seconds and top with the glaze.





S’more Granola Bars

Sauce:

4 Tablespoons Butter, I prefer Kerrygold

¼ cup raw honey

1/8 cup brown sugar

1 Teaspoon vanilla

2 large Tablespoons peanut butter

 

Whisk together butter, honey on medium heat. Turn off heat and whisk in vanilla, peanut butter, and brown sugar.

 

Dry ingredients:

2 cups quick oats

1 cup rice krispies style cereal

½ cup crushed graham crackers

 

In a large bowl mix together oats, cereal, marshmallows, graham crackers.

 

Add sauce until all mixed together.

Pour into lined 9X13 dish. Cover with 1 cup of dark chocolate chunks, make sure to press into bars.

 

Place in fridge for at least an hour before cutting.

 

Enjoy! Make sure to keep in fridge.



I have to admit, I did not perfect these. They crumbled more than I would like. I am determined though because the flavor is AMAZING.
