Shepherd’s pie boats
Do you need a good comfort food to try out? This one was perfect on a good stormy day for my family. Oh man did these surprise me with how good they turned out! 2 of my 3 boys went wild, one even had seconds. I feel like these have the perfect amount of meat, and veggies. Try them, trust me!
Shepherds Pie Boats
4 russet potatoes, cooked, I cook in the oven at 420 for about an hour.
Remove potatoes inside, leaving a thick shell.
Place potatoes in a medium bowl.
Mix with:
1/2 cup milk
3 TBSP butter
Salt
I blended together to make mashed potatoes.
1 lb ground beef
1 white onion, chopped
2 cups pea and carrot mix, I bought frozen
1/2 jar Raos sauce
2 TBSP tomato paste
1 cup beef broth
1/4 tsp rosemary
1/4 tsp thyme
1/2 tsp garlic powder
1/2 tsp onion powder
Salt, pepper
Cook meat with onion on medium/high until cooked through.
Reduce heat add pea mix, tomato paste, sauce, and seasonings.
Bring to a simmer, add broth. Simmer about 5-10 minutes.
Preheat oven to 400.
Place potato boats on lined cooking sheet.
Add meat mix to boats.
Top with mashed potatoes
Add shredded cheddar cheese to the tops.
Cook for 15 minutes, high broil for 4-5 minutes.
