Shepherd’s pie boats

Do you need a good comfort food to try out? This one was perfect on a good stormy day for my family. Oh man did these surprise me with how good they turned out! 2 of my 3 boys went wild, one even had seconds. I feel like these have the perfect amount of meat, and veggies. Try them, trust me!

Shepherds Pie Boats

4 russet potatoes, cooked, I cook in the oven at 420 for about an hour.

  • Remove potatoes inside, leaving a thick shell.

  • Place potatoes in a medium bowl.

Mix with:

1/2 cup milk

3 TBSP butter

Salt

  • I blended together to make mashed potatoes.

1 lb ground beef

1 white onion, chopped

2 cups pea and carrot mix, I bought frozen

1/2 jar Raos sauce

2 TBSP tomato paste

1 cup beef broth

1/4 tsp rosemary

1/4 tsp thyme

1/2 tsp garlic powder

1/2 tsp onion powder

Salt, pepper


  • Cook meat with onion on medium/high until cooked through.

  • Reduce heat add pea mix, tomato paste, sauce, and seasonings.

  • Bring to a simmer, add broth. Simmer about 5-10 minutes.

  • Preheat oven to 400.

  • Place potato boats on lined cooking sheet.

  • Add meat mix to boats.

  • Top with mashed potatoes

  • Add shredded cheddar cheese to the tops.

  • Cook for 15 minutes, high broil for 4-5 minutes.
