Pistachio Pesto Tomato Soup with Spider Grilled cheese

I made this for lunch this last weekend, and it was a BIG hit for my boys! They all had seconds of each. I swear a good “themed” lunch is always a hit in my home. Fall is coming and this soup is one is a favorite of my family. Instead of the regular pine nut pesto, I loved a good pistachio based pesto. The pesto truly brings this whole soup together, it would be too plain without in my opinion. I hope you try it out, and let me know if you decide to make it! Pistachio Pesto Tomato Soup

Makes 4 lunch servings, double for more

 Roasting Tomatoes:

What you need:

10 cocktail tomatoes, quartered

1 small white onion, quartered

1 Teaspoon minced garlic

Salt, pepper, and Thyme

 What to do:

Roast tomatoes with onion, garlic, and seasonings at 400 degrees Fahrenheit for about 20 minutes on a lined baking sheet.

Pistachio Pesto:

What you need:

½ cup shelled pistachios

1 lemon, juiced

1 Teaspoon minced garlic

1 handful fresh basil

½ cup cold pressed olive oil

Salt, pepper

 What to do:

Blend all ingredients in a blender.

Add roasted tomato mix to the pistachio pesto.

Blend all together.

 

Add 1 cup heavy cream, and continue to blend.

 

For fun I added a spiderweb made of sour cream, but you cold just top the soup with parmesan cheese!

 

Serve with a grilled cheese “spider!” Just cut a grilled cheese into a circle shape and add 3 pretzel sticks on each side.
