One Pan Fajita Bake

This is such an easy dinner idea! It really turned more like a chili almost that you can dip tortilla chips into. It can all be done in one pan, and that saves so much time in itself. Try it out!

Ingredients:

1-2 lb cubed steak, season in taco seasoning, and cut into strips

1 white onion, chopped

1 bell pepper, chopped, I used yellow that I had on hand

1 16 oz can diced tomatoes

1 16 oz can corn

1 16 oz refried black beans

1/2 jar of siete brand red enchilada sauce

season with oregano, salt, pepper, garlic poweder

2 cups shredded cheddar cheese, or Monterey jack

Top with cilantro, sour cream, and tortilla chips of choice

What to do:

Cook in a large oven safe pan, the meat on medium. Cook until half way cooked.

Add onion, and bell peppers, simmer for about 3 minutes.

Turn off heat. Add tomatoes, corn, and enchilada sauce.

Season.

Drop spoonfuls of beans over top.

Top with cheese.

Bake 400 for about 15-20 minutes.

Enjoy with sour cream, cilantro, and chips!
