Homemade Spaghetti O’s and mini meatballs
Okay if you are like me you loved spaghetti o’s as a kid, especially with the mini meatballs! Chef boyardi anyone?! The memories. But I convinced myself I could make these for my boys homemade, and we nailed it. Let me know what you think!
Spaghetti o’s with Mini Meatballs
Mini meatballs
1 lb ground beef
Salt, pepper
1 tsp dried oregano
What to do:
1.) Roll 1 tsp balls.
2.) Place on a lined baking sheet.
3.) Bake at 350 degrees Fahrenheit for about 12-15 minutes.
2 cups O shaped noodles of choice-boil till cooked
Sauce
3 TBSP Butter
1 Tsp minced garlic
2 TBSP tomato paste
1/2 cup beef broth-I used Fond beef bone tomato broth, if using regular broth just add a 1/4 tsp dried thyme, and 1/4 tsp garlic powder
2 TBSP honey
1 can diced tomatoes
1/4 cup heavy cream
1/2 tsp dried basil
Salt, pepper
Parmesan cheese, for topping- optional
2 TBSP fresh sliced basil-optional
What to do:
1.) In a sauce pan, melt butter on medium heat.
2.) Add garlic, and tomato paste and whisk together.
3.) Add diced tomatoes, salt, pepper, basil, and honey.
4.) Add broth, and bring to slight simmer for 10-15 minutes.
5.) Add cream, and turn off heat.
Add sauce, and mini meatballs to cooked noodles.
Top with Parmesan cheese, and sliced fresh basil-optional!
