Homemade Pop-Tarts!

I mean is there a childhood left without experiencing pop-tarts of all kinds?! I think everyone can say they had them. I have been on a mission to make homemade ones for my boys! These ones are it! They literally taste, and look like a pop-tart without the processed yuck. Give them a try, and make sure to tag on Instagram @livingspunky if you do!

Homemade Pop-tarts

Dough:

2 cups all purpose flour

1/4 maple sugar

1 and 1/2 sticks cold butter, cubed

1 cup sourdough discard

What to do:

Whisk together flour, salt, maple sugar.

Add cubes of cold butter. Use either a pastry cutter or fork and get the dough mixed where the butter is pea size.

Add sourdough. Dough will be a bit flaky and harder to mix. Knead until all mixed together.

Make dough into disks, wrap, and refrigerate at least 1 hour. Can leave for a few days if needed.

Filling:

Your choice of jam, or homemade, I used a raspberry jam.

Roll dough out on floured surface.

Get the dough to about 1/8 inch, cutting into a smooth rectangle shape with dough cutter or knife.

Cut equal sized rectangle shapes that match each other for a top and bottom piece.

Add filling to the middle of rectangle. Leave room around edges.

Pinch the next rectangle on top, then press fork on edges.

Place on lined cooking sheet.

Bake at 350 degrees Fahrenheit for about 30 minutes.

Note: I add butter to the tops when there was about 10 minutes baking time left, and then again when removed from oven.

Allow to fully cool, and add glaze if want!

Glaze:

1/2 cup organic powdered sugar

A few splashes of milk

Mix to a thicker glaze, allow to dry on pop-tarts!
