Homemade dirt cup snacks
Okay flashback to childhood right?! A pudding cup, with chocolate cookies, and gummy worms! What could be more fun? Homemade!! These take a bit of effort but so worth it. Enjoy!
Homemade Gummy Worms
4 TBSP gelatin
1.5 cups juice of choice ( I only had pineapple on hand, and mashed in strawberries)
1 TBSP honey
What to do:
Mix 1/2 cups juice to gelatin and set aside.
Begin warming remaining juice, and honey on stovetop.
Add in gelatin mix, and stir until dissolves completely.
Add to choice of molds, add to fridge until mix hardens.
Brownie style cookies
5 TBSP unsalted butter
1/2 cup chocolate chips
Melt in 30 second increments.
2 room temperature eggs
1/2 cup coconut sugar
1/2 cup honey
1 teaspoon vanilla
1 cup flour
1/2 tsp salt
2 Tablespoons cocoa powder
1/4 teaspoon baking soda
What to do:
In a kitchen aid mixer with paddle, whip together on medium speed the eggs, coconut sugar, honey, and vanilla for about 5 minutes.
Add in flour, salt, cocoa powder, and baking soda.
Add in melted butter/chocolate mixture.
You will probably have to mix by hand at this point.
Scoop onto a lined cooking sheet by the tablespoon and give 2 inches between for spreading.
Bake at 350 degrees Fahrenheit about 10 minutes.
Chocolate Pudding
This made 5 servings for our family!
2.5 cups milk, I used raw milk, whole is good too
1/4 cup Dutch cocoa powder
1/3 cup honey
1 tsp vanilla
2 TBSP cornstarch
1/3 cup chocolate chips of choice
What to do:
Heat milk on stove.
Add in salt, cocoa, vanilla and honey. Whisk.
Add cornstarch.
Bring to a boil, simmer a few minutes. Whisk often.
Add chocolate chips.
Remove heat.
Add to bowls or jars. Cool a few hours.
Add pudding to a cup, crumble cookies half way, top with a little more pudding and gummy worms!
