Creamy White Chicken Crockpot Chili

This creamy white chicken chili is so yummy! It has a ton of chicken, so your belly actually gets full! This recipe makes a ton, so cut the recipe in 1/2 if you don’t like leftovers! I made it for my family of 5, and there was enough for another meal. This is so good for those busy days! I started the chicken in the morning before I left, came home and threw everything else in, and it was ready when we all came home for dinner.

Creamy white chicken crockpot Chili

What you need

2 packages of chicken tenderloins, or at least 4-6 cups shredded chicken of choice

Cook chicken with 1/2 cup chicken broth, salt, pepper on low for about 4-5 hours. Shred!

In a pan on high heat sauté -

3 TBSP Butter

1 small white sweet onion

1 red bell pepper

1 yellow bell pepper

2 Tsp minced garlic

Add veggies to crockpot chicken.

Add in

1/2 block of cream cheese

1 cup green enchilada sauce, I love siete brand

4 cups chicken broth

1 16oz can diced tomatoes

1 16 oz can corn

1 lime, juiced

1 tsp oregano

1/2 tsp garlic powder

1 TBSP chili powder

1 tsp cumin

Salt, pepper

Place on high 1-2 hours to heat.

Add 1 cup sour cream once heated.

Bowl up with your favorite toppings.

Mine are shredded cheese, cilantro, avocado, red onion, jalapeño slices, and extra sour cream.
