Creamy Sausage Chowder with Pedersons Farms

I knew instantly I needed to make a GOOD fall soup when I received these German sausages from Pedersons Farms. It turned out way better than expected! The sausage is already cooked, so it just needs to be heated, but I wanted the grill flavor- so we grilled ours along with the corn on the cobs. Definitely add this chowder to your fall dinner lineup!

Creamy Sausage Chowder

Serves at least 6-8

What you need:

5 TBSP Butter

1 medium sweet onion, chopped

4 celery stalks, chopped

5 carrots, chopped

12 red potatoes, diced in 1 inch pieces

4 corn on the cobs, grilled, or 2 cans of corn

2 packages of Pedersons German Sausages, cut into smaller pieces

1 TSP minced garlic

1 mild 4 oz green chiles, more if you want spice

6 cups chicken broth

1.5 cups heavy cream

1 TSP garlic powder

1 TSP salt

Pepper to taste

2 cups shredded cheddar cheese

2 green onions, optional for topping

What to do:

1.) In a Dutch oven pot, add butter and melt. Add in carrots, onions, and celery and sauté.

-we grilled our sausages, and corn while this took place

2.) Add garlic, cook a few minutes.

3.) Add flour, and whisk together.

4.) Mix in green chiles, potatoes, corn, and broth. Bring to a boil until potatoes soften.

5.) Add in seasonings.

6.) Reduce to low heat. Add in cream.

7.) Carefully blend partway with an immersion blender, leaving some larger chunks still.

8.) Add Sausages, allow to heat a few minutes.

9.) Turn off heat, add half the cheese.

10.) Serve with cheese, and green onions on top.
