Happy Anniversary!

I seriously can’t believe my third wedding anniversary has now come and gone already! It feels like it was my actual wedding day yesterday! It was seriously one of the best days in my life, and I could still just stare at pictures of that day and go back in time! SO much has happened and changed in three years and I wouldn’t have it any other way.

In three years there has been a huge move, a remodel, a few investment properties, owning cows, a couple new jobs, one baby, and another one on the way! Now here we are talking about another move in the near future and goals in more business of our own! It’s all exciting when you really think about it, even through all the sweat, tears, and all!

I think all these changes have brought my husband and I closer on a different level. I mean back in the day the worry was when were we going to see each other and work our schedules together, now it’s caring for our boy and how to better our life day by day for the future! Every phase in life brings stress and happiness, right?!

Well, anyway, I have a few recipes to share that are great for an anniversary dinner in! Enjoy!

Garlic Parmesan Mashed Potatoes

Serves 4-6

6-8 Red Potatoes, cooked

2 green onion, chopped

Salt/fresh pepper

2-3 garlic cloves, minced

4 oz Cream Cheese, softened

1/4 Cup shredded cheddar cheese

1/4 Cup fresh Parmesan cheese

3 Tablespoons Butter

1/4-1/2 Cup milk, I use whole milk

What to do:

1.) Preheat Oven to 350 degrees Fahrenheit. Cook Potatoes in boiling water for 15 minutes, till can pierce with a fork. I leave the peel on.

2.) Rinse and dry Potatoes. Mash in a bowl with masher.

3.) Add Butter, Cream Cheese, and garlic, continue mashing together.

4.) Add in Onion, salt/Pepper, Parsley, cheeses, and milk till a creamy consistency. I like to leave a few chunks of potato through mine.

5.) In a greased dish, place potato mix. Bake for 30 minutes, or until hot through.

Parmesan Garlic Steak Sauce

Serves 6 or so

1-2 Tablespoons Olive Oil

2 Tablespoons Butter

1 Tablespoon Flour

1/2 Cup Heavy Cream

1/2 Cup Chicken Broth

1/2 Cup fresh Parmesan


1/4 Teaspoon Parsley

What to do:

1.) In a small sauce pan, on medium/high heat, mix oil and butter till butter melts.

2.) Add in Garlic and cook a minute or two.

3.) Add flour and cook while whisking another minute or two.

3.) Add heavy cream and broth, bring to slight boil and then reduce heat.

4.) Add cheese and spices and turn heat off. Drizzle over steak, or even potatoes!
